Domaine Vincey Chemin de Châlons is a singular and precise Blanc de Blancs Champagne, made exclusively from Chardonnay grapes grown in a Grand Cru vineyard in Oger, on the Côte des Blancs. This single-vineyard Champagne is vinified without filtration or fining, aged in oak barrels, and then disgorged with an extra brut dosage to reveal the full purity of the chalky terroir. The nose is delicate and taut, with aromas of lemon zest, wet stone, hazelnut, and white flowers. On the palate, the bubbles are fine, the texture vibrant, with flavors of green apple, chalk, light brioche, and a refreshing salinity. The finish is precise, persistent, and remarkably elegant. A mineral and structured Champagne, ideal for fine dining.
