The Moutard Family's Chablis Vieilles Vignes is a white wine made from Chardonnay grapes grown on old vines planted on the Kimmeridgian clay-limestone slopes typical of the Chablis appellation. The age of the vines, often exceeding forty years, allows for the production of a more concentrated wine with a pronounced expression of the terroir. Vinification is carried out with precision to preserve the natural freshness of the Chardonnay, with aging in stainless steel tanks that retains all the purity of the fruit and the characteristic minerality of the vintage. On tasting, the wine displays a brilliant pale yellow color. The nose reveals aromas of citrus, flint, and white flowers, complemented by a light iodine note. On the palate, the attack is taut, with beautiful intensity and a saline, persistent finish. This Chablis pairs perfectly with seafood, grilled fish, oysters, or fresh cheeses. It can be enjoyed young for its liveliness or after a few years of aging for a fuller and more complex expression.
