The Beaune Les Bons Feuvres from Domaine Françoise André is a red Burgundy wine made from Pinot Noir grapes grown on 66-year-old vines planted in clay-limestone soil. Located on the lower slopes, on the border between Beaune and Pommard, this plot benefits from a favorable exposure that promotes optimal grape ripening. The harvest is carried out by hand with rigorous sorting of the bunches to ensure impeccable quality. The grapes are fully destemmed to enhance the finesse of the Pinot Noir and the elegance of the tannins. A pre-fermentation maceration of approximately 7 days takes place in temperature-controlled tanks, guaranteeing a gentle and precise extraction of aromas. During alcoholic fermentation, punch-downs and pump-overs are performed daily based on tasting the must, allowing for optimal extraction of elements from the skins while limiting the contribution of coarse compounds from the seeds. The wine is aged for 12 months in 228-liter oak barrels, with a moderate proportion of new oak, between 25 and 30%, to allow the terroir of the appellation to fully express itself. On the palate, this wine displays a deep ruby ​​color with garnet highlights. The nose offers aromas of Morello cherries and ripe red fruits, accompanied by subtle spicy and woody notes. The attack is fresh and velvety, revealing a full body and perfectly integrated tannins. The finish is long and harmonious, marked by a beautiful aromatic persistence with fruity and spicy notes. This wine pairs ideally with white meats, veal, Iberian pork, or beef ribs. It can be enjoyed now to appreciate its freshness and fruitiness, but will gain in complexity after a few years of aging, offering an even richer tasting experience.
