The Beaune Montée Rouge from Domaine Françoise André is a red Burgundy wine made from Pinot Noir grapes. The 60-year-old vines are planted in clay-limestone soil, giving the wine a beautiful complexity. Hand-harvesting with rigorous sorting allows for the selection of the best bunches. A pre-fermentation maceration of approximately 7 days in temperature-controlled vats precedes alcoholic fermentation, during which punch-downs and pump-overs are adjusted daily based on tasting the must. Aging for 12 months in oak barrels, with a moderate proportion of new oak (25 to 30%), respects the expression of the terroir. On the palate, this wine displays a raspberry-red color with brilliant highlights. The nose offers floral notes of peonies and roses, accompanied by light toasty hints. On the palate, the attack is fruity and fresh, with light tannins providing a refreshing sensation. This wine pairs perfectly with chicken fillets in a creamy sauce, mushroom dishes, or steamed cod loin. It can be enjoyed now to appreciate its freshness, but will gain complexity after a few years of aging.
