The Chorey-les-Beaune "Les Tue Boeuf" from Domaine Françoise André is a red Burgundy wine made from Pinot Noir grapes. The 45-year-old vines are planted in clay soil, giving the wine a beautiful structure. The harvest is done by hand with meticulous sorting of the bunches. The grapes are entirely destemmed to enhance the finesse of the Pinot Noir and the elegance of the tannins. A pre-fermentation maceration of approximately 7 days is carried out in temperature-controlled tanks, ensuring precise extraction of aromas. During alcoholic fermentation, punch-downs and pump-overs are performed daily based on tasting the must. The wine is aged in 228-liter oak barrels for 12 months, with a moderate proportion of new oak, between 25 and 30%, to allow the terroir of the appellation to fully express itself. On tasting, this wine displays a vibrant crimson color. The nose offers aromas of faded roses and potpourri. On the palate, the attack is fresh, followed by a tannic structure that permeates the taste buds, revealing majestic red cherry flavors. This wine pairs ideally with roasted Burgundy poultry with a mushroom sauce, or veal rump with morels. It can be enjoyed now to appreciate its freshness and fruitiness, but will gain complexity after a few years of aging, developing more evolved tertiary aromas.
