The Savigny-lès-Beaune Ez Connardises from Domaine Françoise André is a red wine made from Pinot Noir grapes grown on 61-year-old vines planted in clay-limestone soil. The harvest is done by hand with rigorous sorting of the bunches to ensure the quality of the grapes. The grapes are fully destemmed to enhance the delicacy of the Pinot Noir and the elegance of the tannins. A pre-fermentation maceration of approximately 7 days takes place in temperature-controlled tanks, guaranteeing precision in the various stages of winemaking. During alcoholic fermentation, pump-overs and/or punch-downs are performed based on daily tastings of the must, allowing for optimal extraction of phenolic compounds while minimizing the coarse elements from the seeds. The wine is aged in 228-liter barrels for 12 months, with a moderate proportion of new oak, between 25 and 30%, to allow the appellation's terroir to fully express itself. In collaboration with the coopers, a perfect match is sought between the type of barrel and the wine's character. On tasting, this wine displays an intense purple color. The aromatic bouquet is complex, with notes of vetiver, sandalwood, patchouli, and fresh marc. On the palate, it seduces with its roundness and fruitiness, with supple tannins, before a touch of green bell pepper reappears on the finish, adding an extra spicy dimension. This wine pairs ideally with grilled red meats, dishes with sauces, or aged cheeses. It can be enjoyed now to appreciate its freshness and fruitiness, but will gain complexity after a few years of aging, developing more evolved tertiary aromas.
