Pascal Jolivet Blanc Fumé is a dry, taut white wine made exclusively from Sauvignon Blanc grapes grown on the limestone and flint soils of the Pouilly-Fumé appellation in the Loire Valley. This wine expresses with purity the mineral character of Sauvignon Blanc on these emblematic soils. The nose reveals clean aromas of lemon, grapefruit, gooseberry, and flint. On the palate, the attack is lively, the texture precise, with flavors of citrus and green apple, a lovely vegetal freshness, and a pronounced salinity. The finish is long, chiseled, and mineral. An elegant and crisp smoky white, ideal with seafood, raw fish, or goat cheese.
