Pascal Jolivet Indigenous

Pascal Jolivet Indigène is a characterful Sancerre Blanc, made exclusively from Sauvignon Blanc grapes grown on old vines planted in the appellation's finest limestone terroirs. This rare cuvée is fermented solely with indigenous yeasts, without any intervention, to express the purity and identity of the grape variety and the soil. The nose reveals complex aromas of ripe lemon, flint, juicy pear, and white flowers. On the palate, the texture is ample, taut, and mineral, with flavors of citrus, white fruit, chalk, and a vibrant salinity. The finish is long, precise, and elegant. A great Sauvignon Blanc, authentic and vibrant, perfect for fine dining or for aging for a few years.
