Pascal Jolivet Les Caillottes is a dry, crystalline white wine from the Sancerre appellation, made exclusively from Sauvignon Blanc grapes. Grown on very stony, limestone soils known as "caillottes," this wine reflects a pure, taut, and elegant expression of the grape variety. The nose reveals aromas of lime, white flowers, green apple, and damp chalk. On the palate, the texture is lively and precise, with flavors of citrus, white currant, flint, and a pleasant salinity. The finish is long, precise, and very mineral. A Sancerre of great finesse, perfect for pairing with oysters, grilled fish, or aged goat cheeses.
