St. Laurent Rye Whisky is a Canadian whisky produced by the St. Laurent Distillery, located in Rimouski, Quebec. It is made from 80% locally grown rye and 20% malted barley, fermented on grain, and then double-distilled in a copper pot still. This whisky is aged for three years by the sea in a mixture of new American oak barrels and ex-whisky casks, which gives it a rich aroma and a distinctive texture.
On tasting, it reveals a complex nose blending notes of ripe apple, leather, and sweet wine. On the palate, the attack is supple with spicy flavors of black pepper, walnut, toasted oak, and brown sugar. The texture is oily, round, and enveloping, with a warm and lingering finish.
This versatile whisky is best enjoyed neat to fully appreciate its richness, but it also works beautifully in cocktails, particularly in a Manhattan or a modern twist on the Old Fashioned. It perfectly embodies the Nordic and artisanal identity of this Quebec distillery.
